For a development environment, which OS platform do you recommend?
MacOS?
Windows PC?

Development is supported on both Windows and Mac powered devices. It is largely up to your own personal preference whether you develop on either platform. Unity is also fully supported on Windows and Mac devices and can be versioned without compatibility issues between the two platforms.
